Aperitif & Starters & Fish 
The Domaine de Pellehaut Côtes de Gascogne Blanc is an aromatic Gascony blend (grapefruit, apricot, pomelo) that is traditionally served with shellfish or cold fish. Serve it chilled as an aperitif or with and shellfish like prawns or scallops. 
  
Likewise, for light first courses like prawn cocktail, melon with ham or a winter vegetable soup, crisp whites and bubbly are ideal. Fathoms Bay, an easily drinkable Marlborough Sauvignon Blanc offers zesty citrus and tropical fruit flavours with vibrant acidity, making it excellent with shrimp or smoked salmon. 
  
Main Course – Roast Turkey & All The Trimmings 
With the hearty Christmas Turkey (with sage stuffing, cranberry sauce and gravy), richer reds are fitting. Our experts recommend Tondeluna Crianza Rioja (Spain) – A medium-bodied Tempranillo aged in oak, offering ripe blackberries, cherries and a hint of vanilla. Its integrated tannins and fruit profile make it a natural partner for roasted meats. In practice, this Rioja will stand up well to turkey and gravy, echoing the berry and spice notes of cranberry sauce. 
  
If Turkey isn’t your thing, then fear not. Château Brande-Bergère 2019 – A classic Bordeaux red (Cabernet/Merlot blend) with cherry and violet aromas and soft tannins. This red is typically elegant and pairs well with game meats [and] This wine’s structure and subtle fruit will complement the meat and herby stuffing without overwhelming. 
  
Both reds can be served with the turkey and all the trimmings. (You might open the Rioja with the main course and the Bordeaux either alongside it or afterward during a cheese board.) The Prosecco can also be enjoyed with the main if you prefer bubbles throughout the meal. 
  
Dessert 
Château Routas Rosé (continued) – If a wine is needed with dessert, this vibrant Provence rosé can work with a variety of sweets but particularly fruit ones. Its strawberry and peach notes offer a refreshing counterpoint to a fruitcakes or lighter Christmas puddings, especially if served slightly chilled.
