Traditionally, most red wine is served at room temperature. However, modern room temperatures are often slightly higher than the optimum for enjoying reds. Chilling the bottle in the fridge for 20–30 minutes before serving can help bring the wine to the ideal temperature, enhancing its aroma and flavour.
Red wine is best stored on its side in a cool, dark place away from light and vibration. Storing the bottle on its side keeps the cork in contact with the wine, this prevents the cork drying out, shrinking and allowing air into the bottle which can cause the wine to spoil. UV rays in light can break down the tannins in red wine, so if you plan to store a red wine for an extended period its best doing so in the dark.
Allowing a red wine to breathe, enhances the wines natural aromas and flavours while softening the tannins. This takes away some of the harsher flavours and allows for a smoother drinking experience. If you can you should try to decant some of the richer reds for 30 to 60 minutes before drinking. If you can't do this be sure to swirl your wine in your glass to expose the more of the liquid to the air. Lighter red wines like Pinot Noir wont need to be decanted for as long and will be at their optimum after just a few minutes.
Tannins are natural compounds found in grape skins, seeds, stems and in the oak barrels used to age the wine. They give the red wine its body and astringency, the slightly dry, puckering mouthfeel you get from reds. Tannins help to balance the fruitiness and acidity of a red wine. Tannins act as a natural preservative, red wines with high tannin content often age better. Different grapes and manufacturing techniques can greatly affect the level of tannins in a red wine.
if a red wine tastes like vinegar then the wine has started to oxidise. This happens over time and is natural for a red wine, so if it tastes like vinegar its past its prime. This can mean the bottle wasn't stored correctly or was opened too long ago.
